Dudhi na Muthiya or Muthia, a traditional Gujarati dish which is savory, healthy, very flavorful tea time snack. Its very quick to prepare and healthy recipe you can use in tiffins, kids lunchbox, or office lunchbox. You can also freeze them for later use just don't temper them until you are ready to use. Dudhi na Muthiya Recipe 2 cups grated bottlegourd (Dudhi/Lauki) OR (ZUCCHINI OR CABBAGE CAN BE USED) 2-3 Tbsp Ginger-Garlic Paste 2 Tbsp Green chili paste (as per taste) Handful of chopped Fresh Fenugreek leaves (Methi) OR Kasoori Methi 1 tsp Ajwain / carrom seeds (it helps in digestion) 1 tsp sesame seeds / til ¼ tsp hing / asafoetida 1 tsp Turmeric powder/ haldi 1 tsp cumin-coriander powder (dhaniya jeera pwd) 1 Tbsp sugar (optional) ½ cup Besan or ladoo besan / chickpea flour (fine or coarse) 1 cup whole wheat flour (or semolina) 1 Tbsp oil /ghee/butter Mix all ingredients in a bowl and knead a dough, No water needed as bottle gourd(dudhi) will release lots of water, if zucchini or cabbage used than you might need to add little water. Get steamer pot ready. Make logs and put onto steamer plate. Steam for 20 min. Let them cool, chop them into 1/2 inch thick pieces and add tempering. For tempering, Heat 1 tbsp oil in a pan. Add mustard seeds, cumin seeds, hing/ asafoetida. Let the seeds crack. Add ajwain(carrom seeds), chopped green chilies, (if you have curry leaves/kadi patta, you may add it here. Add chopped muthiyas and cook until edges turn slight golden. Add sesame seeds and freshly chopped coriander. Serve with Hot masala chai. Perfect low calories tea-time snack. Enjoy it!
