Ingredients:
Serves 1 to 2
1 to 2 Filet of salmon (I used wild caught Atlantic salmon)
2 tbsp. canola oil
4 oz. of mushrooms (I used mix of baby bella, oyster, shitake)
1 to 2 thinly sliced shallots (can use onion also)
2 cloves minced garlic
1 tbsp. freshly chopped rosemary
zest of one lemon
squeeze of lemon juice (tsp or so)
1/2 cup vegetable stock
1 tbsp. white wine vinegar
1 tbsp. unsalted butter
1 tsp. sugar
kosher salt and cracked black pepper to taste
