Inspired by the Ghanaian ANGWA MO (where Rice is cooked in a spicy Coconut oil with salted Beef) and the Caribbean Rice and Peas) where Rice and Red Kidney Beans are cooked in Coconut milk, I present this ANGWA WAAKYE.
Waakye is a Ghanaian dish made from Rice, Beans and Millet leaves.
The Millet leaves gives the Waakye it’s distinctive deep indigo colour (however it has been omitted from this recipe).
