INGREDIENTS FOR OTTU SHAVIGE:
Idli rice/Salem rice -4 glasses (400 ml glass)
Salt-as per taste
Water-for grinding
Wash rice 3-4 times and soak for 5-6 hours/overnight. Drain water and grind it to very smooth batter adding water little by little. Don't make very thin batter
Boil water in idli cooker fill ground batter in idli plates/moulds and steam it for 10-15 minutes. Check the idli, if it is cooked by inserting toothpick or knife. If it is done knife will come out clean/non sticky. Unmould from idli plates and store in a hot box/casserole so it will be easier to make shavige.
Place the cooked idlis in to the shavige press. Rotate the handle the thin strands of shavige comes out of the mould. This is ready to use. No need to cook again
Serve with coconut milk/lemon seasoned shavige /tomato shavige etc according to your taste
Today we are making another variety of shavige- Mushroom biriyani using ottu shavige
This is my co sisters aunt's recipe
INGREDIENTS FOR MUSHROOM BIRIYANI:
Mushroom-1 pkt.
For grinding:
Cardamom-2
Cloves-4
Cinnamon-1 inch piece
Fennel seeds-1 tsp.
Khus khas-1/2 tsp.
Garlic-10-12 cloves
Ginger-1 inch piece
Green chillies-10 no
Pudina-1 hand full/1 bunch
Coriander leaves-few
Onion-1/2 chopped
For seasoning:
Bay leaves-2
Onion-3 chopped
Tomato-2 chopped
Salt -as per taste
Lemon-1/2-1
Heat 2 tbsp.oil in a kadai add 2 cardamom, cloves, cinnamon, fennel seeds, khus khus,garlic, ginger and green chillies. Fry for 2 minutes add pudina stir 2-3 times just till pudina shrinks and switch off. Don't over fry we have to retain its green colour. Let it cool. Grind all these with some coriander leaves and half onion. Set aside
In a cooker heat some oil add 2 bay leaves and 3 onions chopped fry till it becomes slightly brown add 2 tomatoes chopped fry till it becomes mushy add mushroom pieces saute for 2 minutes add ground pudina paste add little water by washing the mixer jar. Add salt to taste. It will be gravy like consistency. Pressure cook till mushrooms cooks.
Heat heavy bottomed kadai/pan add 2tbsp.oil and 2 tbsp. Ghee add 2-3 ladle full of gravy add rice noodles/shavige and squeeze lemon and mix gently .
Shavige mushroom biriyani is ready to serve
Taste the biriyani and adjust taste by adding gravy/lemon juice/salt if you needed
If you don't prefer mushroom you can make this recipe by adding vegetables or green peas
Serve with cucumber salad
This gravy can also be served for chapathi or puri
This mushroom biriyani can be served for 4 people
