What are red lentils made of?
Red lentils are yellow lentils that have been hulled and split. They are a light red to orange color, small in size, and create a very smooth puree when cooked. Because they have been hulled and split, red lentils are also the quickest cooking variety for the traditional soup like Turkish soup or شوربة العدس الاحمر Lebanese soup #ClaudettesKitchen
Ingredients:
2 Onions cut it to cubes
2 potatoes cut it to cubes
6 cloves of garlic cut it to cubes
2 carrots cut it to circles
3 cups of red lentils
2.25 Liters of water
On high heat to boil
2 teaspoons of salt
Stir
Remove the white layer when appear above the soup
When boil stir then lower the heat
After 8 minutes give it a stir
When the fork gets easily into the carrot, the dish is ready, turn off the heat
Smooth the dish with the blender
1 teaspoon salt
1 teaspoon paprika
2 teaspoons cumin
3 tablespoons of tomato paste (it preferable to dilute with a little bit of water before add it to the dish to prevent the solid appear of tomato paste on top of the soup
Half cup Olive Oil
Stir

Do you cook lentils before putting in soup?
The other good news: Lentils don't need to soak as beans do (though you do need to sort and rinse them before cooking). That's two reasons why lentil soup is such a winner. Different types of lentils cook in different amounts of time. Some, like red lentils, dissolve as they cook and make for a smooth soup.
Is red lentil soup good for you?
Lentils have been shown to be an excellent source of some vitamins and minerals such as Iron, Potassium and Folate. Lentils are also considered to be a good source of Niacin.
How do you cook red lentils?
Cook on a stovetop, using 3 cups of liquid (water, stock) to 1 cup of dry lentils. Be sure to use a large enough saucepan as the lentils will double or triple in size. Bring to a boil, cover tightly, reduce heat and simmer until they are tender. For whole lentils, cook time is typically 15-20 minutes.
