WELCOME to faha's kitchen. TODAY iam going to share a new recipe of beef nihari |boneless beef nihari in pressure cooker with homemade nihari masla. Nihari is spicy-hot slow-cooked curry made with beef or mutton. The dish originated in Old Delhi (Jama Masjid and Daryaganj area) in late eighteenth century during the last throws of Mughal empire. The nobles ate Nihari early in the morning and then took a long nap before going to 'Zohar' (afternoon Moslem prayers). Later on, it became popular among labor class as a regular breakfast item. Nihari is eaten with Khameeri Roti, or Naan. The dish has a stew like consistency. It is spicy hot with generous amounts of red chili peppers. The meat is browned in Ghee. The typical curry Masala is made by frying ground onions and spices.The meat, Masala and water are combined, brought to a boil. The pot is covered tight. . After about one hour, the meat has become very tender, The broth is thickened with toasted flour to give it gravy like consistency. Finally, Bhagar (Temper or Tarka) of ginger caramelized in oil is added.The dish is garnished with: Chopped fresh cilantro, , wedges of limes, matchstick cut Ginger, chopped hot fresh chili pepper. Let's start with recipe 👇 ○●○●○●○ ingredients ☆beef boneless =700grams ☆fried onion =1cup ☆yoghurt =1/2cup ☆oil =3/4cup ☆fresh coriander leaves ☆lemon =1 ☆ginger =slices ☆green chillies =2chopped ☆SALT=1 tsp ☆Kashmiri chilli powder =1tsp ☆red chilli powder =1tsp ☆coriander powder =1tsp ☆turmeric powder =1/2tsp ☆SHAH zeera=1tsp ☆white zeera(cumin)=1tsp ☆fennel seeds(sunf) =1tsp ☆stric acid =1/4tsp ☆whole coriander =1tsp ☆green cardamom =3/4 ☆black pepper =1tsp ☆cloves =1/2tsp ☆cinnamon STICK=1 ☆black cardamom =2 ☆ NUTMEG =1/4 ☆BAYLEAVES=2 ☆star anies =1 ☆pepper corn =1 ☆ginger garlic paste =1tbsp ☆flour =4tbsp ○□○●○●○●○ METHOD First make nihari masla. Add all whole spices into grinder and make a fine powder. Than mix all spices and homemade nihari masala is ready. Turn on medium heat and put cooker on it. Add cooking oil. Add ginger garlic paste and saute for about 1 minute. Than add beef. Fry until colour changes. Than add nihari masala and add 2/3tablespoons of water. Fry nicely. Now add yoghurt and fry until all water of yoghurt evaporates. Than add fried onions. Mix well and cook for 2/3minutes until onion dissolves. Now add cups of water to pot. Add 2 tbsp wheat flour dissolved into1/4cup of water. BRING it boil. Cover the lid and let it cook for 45minutes. After 45 minutes open the lid and check meat. Meat should be very soft and tender. Now check the gravy if you required more water add 2_3cups water and add 2tablespoons flour dissolved in water. Cook until desired thickeness. Turn off the flame after8/10 minutes boiling. Now make tari . Add 1/4cup oil to pan . Add 1tsp Kashmiri chilli powder. Let it cook for 30/ 40 second . Now dish out nihari and pour tari on it. Garnish with sliced ginger chopped green chillies and fresh coriander leaves. Serve hot with naan.
