Jhol MoMo with very less ingredients :
For Dough:
1 ½ cup all-purpose flour (maida)
½ tsp salt
1 tbsp oil
Add water little by little and make soft dough
Cover and keep aside for ½ an hour
We need 1 cup soya chunks (soaked in hot water)
You can also use Chicken keema or any other vegetables to prepare momo stuffing
Washed and squeezed the extra water from soya chunks
Crumble the soya chunks by your hand or with vegetable chopper
In a separate bowl add finally chopped onion
Finally chopped 1 cup cabbage
Mix it with salt
Keep aside for 5 minutes
Now squeeze the extra water
Add 1 tbsp minced ginger and garlic
Chopped spring onion
Chopped coriander leaves
Add salt as per the taste
1 tsp black pepper powder
Momo masala (you can also use homemade masala)
Add 1 tbsp melted butter or oil
Apply the oil in a steamer
Take a small size ball
Roll it
Wrapper should not be too thick or thin
Let’s wrap the momo
Steam for 10 minutes
Boil 2 cups of water for jhol
Add 2 bay leaves
1 cinnamon stick
Bay leaves and cinnamon add extra flavor in jhol achaar
1 tbsp butter or oil
Add salt and black pepper powder
Roast 1/3 cup soyabean seeds
Roast 1/3 cup peanuts
Add 1/3 cup sesame seeds
½ tbsp Sichuan pepper (timur)
Heat 1 tbsp oil in a pan
Add 1 tsp cumin seeds
Add ginger and garlic sliced
Dried chilies
In a blender jar add roasted soyabean seeds, peanuts, sesame seeds and Sichuan pepper
Blend everything
Add roasted ginger, garlic and dried chilies
Add boiled water
Add 2 tsp lapsi powder (or lemon juice)
Salt as per the taste
Blend everything
Now blend with coriander leaves
